Fresh Marinated Chicken Nibbles

Fresh Marinated Chicken Nibbles are produced from the chicken wing. Nibbles are cut into three components drumette, flat/wingette and the tip however the tip is deposed of. They consist of mainly white meat which can cause them to dry out and over cook due to their low fat content. Nibbles are perfect on the BBQ, oven or even deep fry them to get the skin crispy.

Serves 4-6

IngredientsChinese Chicken Nibbles

  • 1 tsp minced ginger
  • 750g chicken nibbles
  • 1 clove garlic, crushed
  • 1 tsp five spice powder (optional)
  • ¼ cup dark soy sauce
  • 2 Tbsp oyster sauce
  • 2 tsp liquid honey

Chilli and Yoghurt Dipping Sauce

  • 2 Tbsp Sinsin Sweet Thai Chilli Sauce
  • 2 Tbsp chopped fresh mint
  • ¼ cup unsweetened natural yoghurt


  1.  Place the Chicken Nibbles in a re-sealable bag and add the garlic, ginger, dark soy sauce, and oyster sauce. Seal the bag and toss to coat evenly. Refrigerate for 1 hour or up to 1 day.
  2. Place the chicken nibbles on a foil-lined baking tray and fan bake at 180°C for 15-18 minutes.
  3. Serve the chicken nibbles with the Cucumber and Chilli Dipping Sauce.

Chilli and Yoghurt Dipping Sauce

  1. Mix the sweet Thai chilli sauce, mint and natural yoghurt together.

Tips for handling and cooking Chicken:

  1.  Make sure you defrost/store in the fridge on the bottom shelf to prevent leakage. Do not defrost in the mircowave or bench as the chicken will reach a unsafe temperature.
  2.  Avoid cross-contamination by using separate utensils until cooked. Once cooked do not use utensils that were used prior to cooking unless they have been washed thoroughly.
  3.  Cook chicken to atleast 75˚C, use a meat thermometer and insert into this thickest part of the chicken insuring you have reach the desired temperature.
  4.  Make sure there is no blood when your cut into it, the juices that run should be clear.
